Sweet N’ Sassy Fruit Salsa



My family loves all things spicy. Spicy dips, spicy entrees and now I’ve even found a way to make fruit spicy! This salsa is hot and sweet with just a little heat.

Salsa:


3 cups strawberries, chopped
1 cup ripe mango, chopped
1 cup jicama, diced
¼ cup diced cilantro
2 Anaheim peppers, seeded, finely diced
½ teaspoon salt
2 Tablespoons honey
2 teaspoons fresh ginger, minced
3 Tablespoons lime juice

2 cups peanut oil
¼ cup cinnamon-sugar (2 parts sugar/1 part cinnamon)
6-12 large flour tortilla

Combine first five ingredients in large bowl. In a small bowl combine the salt, honey, ginger and lime juice. Gently toss sauce into fruit. Refrigerate for at least 2 hours before serving.

In a deep skillet, heat peanut oil over medium high heat until hot but not smoking. With a pizza cutter, cut flour tortillas into 3 to 4 inch pieces. Fry tortilla pieces a handful at a time. Do not crowd skillet. Cook until crispy. Drain on paper towel and sprinkle with cinnamon-sugar
