Sweet and Spicy Pineapple Salsa



My salsa is unique because I have added pineapple to it. The addition of honey really brings out the sweetness of the pineapple.

Salsa:


1 cup canned pineapple slices
¾ cup diced roma tomato
¼ cup chopped red onion
1 serrano chile seeds and all (use 2 chiles for a hot salsa)
2 scallions
1 small bunch of cilantro (about ½ cup)
Juice of ½ a lime
½ teaspoon of honey
1 teaspoon of pineapple juice from can of pineapple
Salt and pepper to taste

Dice the rings of pineapple and the scallions into small pieces then put into bowl. Finely chop roma tomato, red onion, serrano chile and cilantro (I usually use a food processor to chop these) and add to the bowl. Add the juice of ½ lime, ½ teaspoon of honey and 1 teaspoon of the pineapple juice from the can of pineapple. Add salt and pepper to taste. Chill for at least 1 hour. Even better overnight!
Tastes great with shrimp or fish tacos!
