Avocado Salsa



Created this recipe after having a similar salsa in a restaurant. Easy to adjust the ingredients to taste

Salsa:


3 medium-sized green tomatoes, coarsely chopped (can use semi-green tomatoes, but never red)
4 tomatillos, cleaned and chopped
6-8 jalapenos, stemmed and coarsely chopped, or to taste
5 small garlic cloves
3 medium-sized ripe avocados, peeled, pitted and sliced
8-10 sprigs cilantro, large stems removed
1 tsp. of salt or more to taste
4-6 tablespoons sour cream
1 can (14.5 oz.) low-sodium chicken broth
Lime Juice, 2 squeezes, or to taste

Combine chopped tomatoes, tomatillos, jalapenos and garlic in a saucepan. Bring to a boil, reduce heat and simmer 10 to 15 minutes. Remove from heat and let cool.

Place tomato mixture with the avocados, cilantro, salt, sour cream, chicken broth and lime juice in food processor or blender and blend until smooth.

Adjust to taste.

Makes 4 to 5 cups
