Sassy Summer Salsa Verde



This salsa is excellent as a chip dipper, over chicken enchiladas, or simmered with thin pork chops. We even recently did a unique breakfast topping portobellos with the salsa and queso fresco for the grill. Topped with a sunny side up egg, served with toast...was delicious!

Salsa:


2 lb. fresh tomatillos, cleaned and quartered
1 jalapeƱo, minced and seeded
1 C cilantro, chopped
1 large onion, diced
3 cloves garlic, minced
1 cup chicken stock
Salt
Simmer until the tomatillos are tender and cooked down, blend
