Crispy Garlic Shrimp Salsa
Add garlic flavored salad shrimp pan-fried until crispy to salsa.
2 Roma Tomatoes
1 cup Yellow Corn
2 cups Black Beans
4 Scallions, minced
1/4 cup Lemon Juice
1/4 cup Olive Oil
1 Garlic Clove, minced
1/2 teaspoon Salt
1/4 teaspoon Cayenne Pepper
4 oz Frozen Shrimp, thawed and drained completely
2 Garlic Cloves, minced
3 tablespoons Olive Oil
1.In a skillet, heat 3 tablespoons olive oil and cook 2 garlic cloves until fragrant. Add 4 oz salad shrimp and cook until opaque and crispy. Drain on the paper towel and set aside.
2.Halve 1 avocado. Remove seed, scoop avocados pulp and dice. Dice Roma tomatoes.
3.In a large bowl, combine 1/4 cup lemon juice, 1/2 teaspoon salt, 1/4 cup olive oil, one minced garlic clove and 1/4 teaspoon cayenne pepper. Mix well.
4.Add shrimp, avocado, tomato, corn, black beans and minced scallions to the bowl. Toss to coat.
