Purple Picante



This salsa utilizes Purple Bolivian Rainbow Peppers (Numex Twilight can be used as a subsitute). This recipe results in a mouth-watering salsa with a purple tint unlike anything most people have tried. The unique color, taste and smell make this salsa a must try for any casual salsa fan.

Salsa:


12-18 Purple Bolivian Rainbow Peppers.
1/2 Purple (Red) Onion
3 Tablespoons White Vinegar
2 cloves Garlic
1 Teaspoon Sugar
1 Tablespoon Salt
6 Purple Tomatillos 1 Teaspoon Red Chili Powder

1. Cut off stems of Peppers
2. Mince Garlic
3. Chop Onion
4. Combine Garlic, Peppers, Onion, Vinegar and Salt in a container than can be refrigerated.
5. Stir ingredients together and leave container in refrigerator overnight.
6. Combine tomatillos, sugar and chili powder with refrigerated mixture in food processor.
7. Puree and enjoy.
