Fresh Summer Roasted Salsa



Cucumber

Salsa:


Cucumber
Red Mini Sweet Pepper
Yellow Mini Sweet Pepper
Tomatoes Roma
Cilantro
Lime
Garlic
Salt
Cayenne Pepper
Red Onion
Olive oil

Wash all veggies, Dry
Heat Skillet to medium
Drizzle Yellow and red peppers with Olive oil and heat all sides until soft
Run under cool water
Let sit
In a food processor add chopped tomatoes, Red Onion, Cucumber Chop but keep a slight chunky consistency

De-seed Cooked yellow and red peppers..and add chopped to Food processor mix
Add juice of 1 lime
Add Garlic, Salt,Black pepper, and Cayenne to taste and let sit for at least an hour..stir and serve..YUM!! The longer this sits the better the flavors marinade into the veggies..
