But Its A Dry Heat Summer Roasted Salsa



This recipe was inspired by my love of both chunky and pureed salsas also a friends recipe that I was introduced to when I was 15.I have tweaked and added ingredients to make it my original!

Salsa:


4-6 Roasted Tomatillos
1 Roasted Green Bell Pepper
1 Roasted Red Bell Pepper
4-6 Roasted Roma Tomatoes
3 Chipotle Peppers (with their Chile sauce)
1-3 Roasted jalapenos
1 Lrg Roasted Onion
1 Lemon ( juiced)
2 Limes (juiced)
1-2 Lrg Avocados (Optional)
Salt & Pepper to taste (Pepper adds more spice)
1 Lrg handful Cilantro
Roast all ingredients and then peel if necessary;chop.
Take half of chunky chopped ingredients and set aside. Take other half and puree into a thick liquid. Then in the pureed half add the cilantro and lime juice.
If choose to use the avocado, chop roughly and add lemon juice. Combine all ingredients so that it is a perfect mixture of both thick pureed salsa and chunky salsa, then add avocado. Add salt & pepper to your taste. Sometimes I need more lemon or lime juice so you can add if you need to.

Serve chilled.
