Spicy summer corn salsa



It is the perfect blend of tomatoes, roasted corn and spices . Perfect with chips, as a side for roasted meats and great on the taco bar.

Salsa:


6 Roma tomatoes, diced finely
1 piece of corn on the cob that has been grilled or roasted - kernels removed or 1 1/2 cups of store purchased roasted corn (drained or defrosted)
1/2 cup of finely chopped red onion
1 clove of chopped garlic
2 jalapeno peppers (seeds removed and finely diced)
1/2 cup of chopped cilantro
1 lime, zest removed and juiced
1/4 teaspoon of ground cumin
Salt to taste

In a bowl add the roasted corn, garlic, cumin, lime zest and salt - let it sit for a while, while the flavors meld.
In a larger bowl combine the tomatoes, onions and jalapenos and blend together very well - add the corn mixture to the bowl of tomatoes and blend everything together with the juice from the lime. Check for salt - perfect time to make any adjustments. Sprinkle the cilantro over the tomato and corn mixture and blend everything together. Serve this fresh salsa with tortilla chips, tacos, enchiladas or roasted meats.
