I couldn't find a salsa I liked at all so I stated making my own. Took me 10 tries to come up with my final recipe which I've now been making for almost 10 years. I constantly have people ask me to make it so they can buy it and I'm not allowed to bring anything else to parties or potlucks anymore!!! It has the perfect Blend of Peppers and a fresh taste. It's spicy, but flavorful and is easily adapted to be mild or as spicy as you wish with all the same flavor profiles.
2 Serrano Chilis
1/2 of a Pasilla Pepper
1/4 Sweet Yellow Onion
4 Garlic Cloves
2tsp fresh black pepper
2 Tbls Lime Juice
2/4 cup Cilantro (whole leaves)
1 32oz can diced tomatoes
Rough chop peppers, onion and garlic and add to food processor, followed by all other ingredients besides tomatoes. Pulse to finely diced (you still want texture but not large chunks)
Add Tomatoes and pulse 3-4 times more.
Serve Immediately or Refrigerate overnight to let flavors meld.
